Ultra-Orthodox Jews xxxxx during the making process of "Matsa", an unleavened bread made from flour and water, eaten during the holiday of Passover, in Jerusalem, Israel, April 2, 2023. Shmura, or guarded Matza, is prepared under tight supervision. From the moment the dough is made it has just 18 minutes to pass all stations along the line before being baked – the importance of the heist is to prevent it from rising. Jewish religion forbids eating leavened grain products during the Passover holiday, which commemorates the the liberation by God of the Israelites from slavery in Egypt as portrayed in the book of Exodus.
