Ultra-Orthodox Jews collect water from the Ein Haniya spring near Jerusalem, April 04, 2023. They will use the water during the making of "Matsa", an unleavened bread made from flour and water, eaten during the holiday of Passover. Shmura, or guarded Matza, is prepared under tight supervision. From the moment the dough is made it has just 18 minutes to pass all stations along the line before being baked – the importance of the heist is to prevent it from rising.
